Plugging in with Good Intentions — Chapter 2: Fun Food Formulas

Food hacks have become all the rage amid facts and fiction in the cyber realm. Social media platforms, such as TikTok and YouTube, are great places to discover quick and easy recipes that are perfect for those who need a little inspiration. From mindless scrolling on these platforms hours on end, I have come across countless examples of food-inspired content. And so, in this edition of Plugging in with Good Intentions, I’m sharing my favorite recipes for each meal of the day, including dessert, that I have discovered via the Internet and social media.


~Breakfast~

We’ve all heard that ‘breakfast is the most important meal of the day,’ so why not make it tasty? I love bananas, especially on top of traditional flapjacks. So, when I watched @maddisonskitchen make her own on TikTok, I knew I had to re-create it and share this fun twist on pancakes. Also, if you aren’t a fan of bananas, you can easily replace them with other fruits in this recipe! From sliced strawberries to apples, the possibilities are endless. 

Banana Pancake Dippers 

What You’ll Need:

  • Pancake mix (or you can make it from scratch)
  • Bananas (as much as your heart desires)
  • Pan 
  • Oil or butter
  • Toppings (ex. syrup, whipped cream, Nutella)

Steps:

  1. Prepare your pancake mix.
  2. Slice your bananas.
  3. Heat up your pan and oil/butter it up.
  4. Dip each banana slice into your batter and ensure they are fully coated.
  5. Place each of your banana pancake dippers about an inch away from one another on the pan to cook.
  6. Once you see bubbles forming, flip them over to cook the other side. 
  7. Cook until your banana pancake dippers are golden brown on each side.
  8. Serve with toppings, if desired.

~Lunch~

Back in the day, I would bring sandwiches that my mom made for school lunch. Of course, I would be picky and request to have no crust. Then, I discovered Smucker’s Uncrustables and thought they were so convenient. Essentially, they are sealed sandwiches with no crust. 

As seen in the picture above, there is a variety of flavors for Uncrustables. Still, if you think about it, they’re chemically processed and frozen. After watching the ‘Trying TikTok Food Hacks’ YouTube video from @merrelltwins, however, I learned that I could make a more nutritional and fresh version of Uncrustables. 

DIY Uncrustables 

What You’ll Need:

  • Bread
  • Cup or glass 
  • Filling (ex. Peanut Butter, Nutella, jelly, fruits, ham, cheese)
  • Toaster 

Steps:

  1. Choose your filling (possibilities are endless here).
  2. Take two slices of bread and spread your filling in the middle of one piece. Be sure to leave space on the outer edges, so your sandwich can be sealed with no leakage.
  3. Assemble your sandwich by placing the second piece of bread on top of the other. 
  4. Now, use your cup or glass to seal your sandwich by pressing firmly and twisting to remove the crusts. 
  5. You should now have your very own and perfectly sealed DIY Uncrustable. 
  6. You can either eat it just the way it is or toast it. Also, they can be prepared and stored in the freezer for later.

~Snack~

At this time of the day, sometimes all you want is something sweet to satisfy your cravings. One of my favorite snacks is cookies, especially Oreos. Still, it’s fun to try your own twist on an American classic. 

Oreos

And so, as I was scrolling on Pinterest, I came across a quick recipe from @CookingClassy on how to make Oreo Truffles! With the recipe calling for only three ingredients, I knew I had to make some myself and share it with you all. 

Oreo Truffles

What You’ll Need:

  • Oreos
  • Cream Cheese
  • Melted Chocolate 

Steps:

  1. Crush Oreos into fine crumbs. This step can be executed in multiple ways. For instance, you can use a food processor, crush them by hand with a fork in a bowl, or by putting the Oreos in a plastic bag and crushing them with a rolling pin. 
  2. Add enough cream cheese to your Oreo crumbs, so that your mixture becomes thick or dough-like.
  3. Now, shape your mixture into round balls. 
  4. Put your Oreo truffles into the freezer to solidify for about 15 minutes.
  5. Once chilled, dip your Oreo truffles into melted chocolate.
  6. You can also add toppings such as additional Oreo crumbs and sprinkles.

~Dinner~

Now, if you’re a regular user of TikTok you might be familiar with this meal I’m about to share with you. One food hack that went viral in early 2021 was Baked Feta Pasta. After watching the TikTok from @feelgoodfoodie, I knew I had to make some myself.

Baked Feta Pasta

What You’ll Need:

  • Pasta
  • Feta Cheese
  • Cherry Tomatoes
  • Olive oil
  • Salt and Pepper
  • Garlic 
  • Basil (if you want to be fancy)
  • Baking dish

Steps:

  1. Preheat your oven to 375 degrees F.
  2. Place a block of feta in the middle of your dish and surround it with your cherry tomatoes.
  3. Drizzle olive oil as well as sprinkle salt, pepper, and a few garlic cloves (or garlic powder) across your dish.
  4. Bake for about 30 minutes or until everything is softened.
  5. In the meantime, boil the pasta.
  6. Once the tomatoes and feta are thoroughly cooked, smash them to create a creamy sauce. Then, stir in your cooked pasta. 
  7. Top with fresh basil, if desired. 

~Dessert~

If the Oreo truffles weren’t enough, then how about Oreo mug cake? Again, here is another twist on an American classic.

Oreo Mug Cake

What You’ll Need:

  • Oreos 
  • Milk 
  • Mug

Steps:

  1. Place a few Oreos into a microwave-safe mug.
  2. Crush your Oreos into a chunky mixture.
  3. Pour just enough milk, so that your mixture is submerged but peeking through the top.
  4. Heat it in the microwave for 30 seconds to a minute. 
  5. Now, you have a gooey chocolate pudding-like mug cake that will satisfy any nightly cravings.

In the end, these fun food formulas can be altered however to your liking. Still, go on and discover more recipes. And remember, stay positive and maintain good intentions.

How to Grow Cabbage In Easy Steps
A picture of a delicious cabbage. At least I think it’s delicious, I’ve never cooked cabbage. Hell, I don’t remember if I’ve ever even eaten the stuff.

Vegetables are the things your parents told you to eat when you were kids, and you either ignored them completely or complied entirely out of fear. The fact that we must be forcibly conditioned to consume boring green stuff is evolution’s fault, as we have become a sedentary society without our bodies ever adapting to the fact that if we want to eat we no longer have to chase down a gazelle on foot and beat it to death with a rock. Thus, I must consume at least some vegetables if I don’t want to devolve into a quivering mass of immobile gelatin, which would be extremely inconvenient as it would deprive me of the manual dexterity required to build the plastic model robots that have been my closest friend during the current crisis. The vegetable I eat most often is celery, not because it tastes good or has any nutritional value aside from fiber but because it doesn’t need to be cooked, just washed. The fact that it has zero calories makes it attractive to me since it means I can waste the space on something else later, but I almost always end up dipping it in hummus to give it some actual flavor and thereby defeating the entire point. My favorite cooked vegetable might be spinach, which I literally never make. This is partially because it’s another food my family makes a lot better than me, and partially because you can buy ten pounds of spinach at the store, cook it up, and wind up with half an ounce. Obviously that’s an exaggeration but I only have so much fridge space and spinach takes up too much of it. Normally the vegetables I prepare the most are green beans and broccoli. These are also both foods I associate with my parents, but I can make them in a way that doesn’t totally embarrass me. I make broccoli more rarely because of two reasons. The first is that it just takes much longer to boil in water, and I don’t trust myself to fry it, so boiling green beans is just more efficient. The second is that ever since I was young I’ve had this weird thing where I only eat the buds of the broccoli, not the stem. I think it has to do with little baby me believing that broccoli was just tiny trees or something, but either way I end up not eating half of the broccoli and that’s just wasteful. It does make it easier to prepare though; to make green beans you need to individually slice the tips off each bean while with broccoli you can just break a piece off the stalk and wash it. Generally I eat vegetables separate from my actual meals, because as previously mentioned in the first chapter my pot is much bigger than the stovetop itself so I can’t really have another thing cooking at the same time. This also means that a lot of the time when I’m feeling pressed for time I just skip vegetables entirely, which would definitely be a bad idea if I considered the future consequences of my actions beyond wildly unrealistic scenarios like turning into a lump of fat who can’t build robot toys. I’m sure the fact that I eat vegetable at all puts me ahead of many, and so by the time I become like unto the blob people from Wall-E there will have already been innovations by the manufacturer which make the model kits able to be assembled the fingers the size of drain pipes.

Physical Wellness

Listening to our mind, body, and soul promotes wellness. It means becoming aware of the choices we make to ensure a healthy lifestyle that will bring happiness and allow us to achieve our goals. Wellness is a life cycle that involves our emotions. It allows us to establish spiritual harmony and maintain a positive physical, mental, and emotional state. 

Wellness consists of eight dimensions of well being which include: physical, emotional, financial, social, occupational, purpose, intellectual, and environmental, (Lexi Slator, 4 Sep 2017. “Physical Wellness”). Chances are that you focus on all eight except for physical.

Ironically, our physical well-being is the element of wellness that we must listen to in order for other areas to be sufficient. Think about yourself like a flower you must water in order to flourish. Think of self-love as when you love a flower, you water it daily. Physical wellness makes a significant impact by encouraging self-growth and increasing the quality of your lifestyle. A couple of things you can do to achieve physical wellness is listening to your body, motivating yourself to be more active, managing your stress, and inspiring yourself to eat healthier.

It is important to push ourselves to be more active, when you don’t pursue an active lifestyle it can potentially affect your motivation, delay your goals, and it can hurt your self-esteem. Yoga is great for being active as it creates mental tranquility, helps with concentration, increases body awareness, and helps relieve stress. A Yoga professor at the Fashion Institute of Technology, Stephanie Bird, implements yoga in her day to day life to help build a strong bond between her physical and mental health. She defines yoga as “cultivating aliveness”, as yoga focuses on crucial areas that make a human being. Such as the body, mind, and emotions. Bird stresses one must start exploring themselves and start doing things differently especially during the year 2020. It is about thinking outside the box, and asking yourself, “what am I doing to keep these areas alive?”. 

The beauty of yoga is that it’s a physical exercise that embodies spiritual relaxation through self-discipline, strengthening your breathing, and restoring balance. Professor Bird conveys yoga as “a new way of life”, it means “to temporarily step back from the busyness of our lives, our activities, and obligations, it is very helpful to maintaining a balance, and calm”. Yoga has many benefits, it helps relieve stress, strengthen your muscles, and it is an experience that allows you to clear your mind, connect, and listen to your soul. This form of exercise is composed of various poses, each pose serves its purpose. 

The child pose is a calming pose that focuses on stretching your neck, spine, and hips. It helps release any tension in your body, also relieving any anxiety.

The cobra pose helps increase flexibility amongst the chest, shoulders, and abdomen, it also helps with strengthening your back. It is a combination of meditation as well because it targets the mind and body.

Pranayama is about having control of your breathing, breathing is essential to living. However, pranayama instills a variety of breathing techniques that helps reduce stress, encourage better sleep, and also decrease the risk of any illnesses. Bhastrika breath is a breathing exercise that entails forceful breathing through inhaling and exhaling, it is about carefully listening to your body during this practice.

Trying to figure out… Food Situation

Food becomes an afterthought real quick once you hit college. Without the reminder of someone providing food or carved out meal times, many college students don’t eat. When they do eat, it’s not even close to the realm of something healthy. This problem usually gets worse during midterms and finals seasons, when many deadlines pile up. It’s hard to keep up and usually, food is the first thing that gets skipped.

At NYU, I found that most students live off events with free food, especially freshmen. For commuters, if you don’t have a meal plan, figuring out what to eat is a struggle.

During my first semester of college, I would go an entire day without eating. I would come home after a long day of classes and just collapse on my bed. While laying in bed trying to muster the energy to start my homework, I would hear low rumblings. Then at times, there would be a loud churning sound. Only then would I register how hungry I was. I’d replay my day to figure what was the last thing I ate. The answer usually was an Eggo waffle with my morning coffee. I soon realized after many repeated moments the insidious nature of my eating habits and mindset. Not only is this practice unhealthy, but it also makes getting through school much harder.

Some things I’ve learned from commuting the past three years:

  • Bring lunch with you whenever you can. 
    • There are plenty of places on campus where you can use a microwave to warm up your food. Additionally, there are sinks and water dispensers if needed. (Commuter lounges are set up for that purpose)
  • Bring snacks on those days when bringing lunch isn’t necessary or takes up too much space in your bag.
  • Stay hydrated! 
    • Carry a water bottle. Maybe a collapsible one that will take up less space once you finish it. Flavor it with limes or fruit if drinking plain water isn’t working for you.
  • Build in reminders.
    • Check in on others and have them check in on you. Find a food buddy to keep you conscious of meals. It helps if they are a foodie or health conscious to keep you on that track.
    • Put reminders or alarms on your phone to eat. It forces you to think about your body and its need for sustenance.

Marion Nestle is the Paulette Goddard Professor of Nutrition, Food Studies, and Public Health at NYU. She teaches courses that range from food writing to food advocacy to topics in food sociology. She has written plenty of articles and books on the topic of nutrition and the dynamics of food in our society. Her philosophy when it comes to approaching food is that “Healthy diets are good for whatever ails you, including stress.”

Here are some points she suggests to keep in mind when thinking about food:

  • Most important fruits and vegetables. Eat the ones you like best, but it’s good to vary them as much as possible.
  • No easy way to say this, but eat less. Weight gain is about excessive energy intake. To keep your energy in balance, choose smaller portions and avoid snacking in between meals.
  • If you like coffee or soda, drink it, but recognize how much caffeine it has and how much is tolerated. I don’t generally view coffee as a problem except when it is excessively caffeinated. Shots are another matter; it’s best to avoid them.
  • Approach food with the mindset of it being life’s greatest pleasure. Eating healthy is so easy that the journalist Michael Pollan can explain how to do it in seven words: Eat food. Not too much. Mostly plants.

How to Suffer Healthily – Guidelines to Surviving NYC Campus

Chapter 1: A Healthful Reality

 

Anyone who moves to New York City has a goal. They have dreams and expectations and a vision of what their dazzling life in the city. Media has shown us so many encouraging stories about the struggle of making your way in New York. There are parties and fashion, runways and bankers, agents and food and artists and culture; all of these things are banded together in such a small place, it’s a wonder you get to somehow experience it all.

 

Yet, NYC college students ultimately end up asking themselves is how do you manage to stay healthy on a student budget while still trying to conquer New York?

 

To help out fellow peers, I’ve compiled a list of a few challenging realities that students should know to expect.

  1. Most Students are Still Growing Up

 

It’s not a shocking truth, but it’s one that hits home for many struggling students. It’s strange enough becoming an adult in a place that demands your attention full time, but students often move astounding distances to live in New York, leaving their family and most of their support system behind. These students must construct new routines and learn the ins and outs of solidarity. At the beginning, no one is making sure that you’re staying fit or eating healthy or eating at all for that matter. It may take a while to become adjusted to getting by on your own.

 

  1.  School is Important

 

Not only do college courses require an immense amount of focus, but now you’re paying for that focus. If you miss too many classes or your grades start to slip, it’s likely you may have to retake a class. What does this have to do with health? The human brain requires a nutritious balance of Magnesium, Omega-3 Fatty Acids, Vitamin D, Vitamin E, Vitamin C, and all of the B Vitamins. Without these elements in your diet the brain loses a significant amount of stamina, making it harder to do well in school. Of course, ramen and dollar pizza slices are staple foods for the regular student, but after a week of MSG and no vitamins, it gets hard to keep up with the fast pace of NYC.

 

  1. Movement is Key

Maybe this one is implied, but people in New York City are constantly moving from place to place and they are always hard-pressed to get there on time. With so much happening at once and with so much to do, it’s a wonder how students find time to stay fit. And while fitness is unique to the individual, it’s sometimes difficult to discern what exactly your body needs. It’s not essential to have a gym membership or to be a part of a sports team, sometimes it’s as simple as investing in a bicycle or scooter to get around town. Just be sure to remember, there’s a difference between being active and staying healthy. Walking around all day and running from one train to the next can be quite the workout; it’s beneficial to find time to relax and get plenty of sleep.

 

Despite all of those chilling realities, it is also extremely important to have fun. Staying healthy in school can be a breeze with the right resources, knowledge and motivation. In this book, I will explain a few tips on how to turn college survival into simply living.

Out of the Library and into the Fire: A College Student’s Arrival into Bedlam

I can attest to the struggle of finding one’s footing upon entering the anxiety-filled halls of freshman year. I remember very clearly being incredibly excited to set out upon an adventure that I had imagined thousands of times through in my mind. However, that didn’t mean that I wouldn’t encounter trials and tribulations that I would learn from. This era was the time in my life when I began to see the most physical change my body had ever undergone. In many ways, were my choices both good and bad, healthy and unhealthy, mature and immature, etc. Sophomore year of college made me aware of how important it is to spend one’s time wisely, in taking action that will propel your entire life in a positive direction, because the time so quickly escapes you.

So what does it mean to wisely spend one’s time as a new college student, fresh blood upon the quads and campuses of universities that are dominated by more intelligent, more attractive, less awkward individuals, and push one’s life in a “healthy direction”? Well, having experienced my sophomore year living in a dorm over one hundred years old with one roommate and six other suite mates…and two bathrooms, I can attest that there is a necessity to be ever aware of three important aspects of one’s life: hygiene/healthy eating, time management, and prioritization of long-term goals. If these things are kept in mind, then it is much less likely that someone will arrive into a bedlam of their own. There will be difficult times, but one has to remember to always be maintaining your happiness and the sources of that for you. For me, being “happy”, or in a good mood, was always very influenced by the things I had recently eaten. And, if you are or ever have been a college student, you will understand that diet, what you are eating everyday, is one of, if not the, greatest influences on your overall well being and must be well maintained.

Saving money, snatching the best promos, having fun, or discovering one’s passions is always going to be on the mind of new college students. However, I found that this focus tends to detriment the decisions made about dieting, hygiene, and the general effort that is

directed toward one’s academics. Let me assure you, if not enough value is endowed to hygiene/health, time management, and prioritization of long-term goals, than a path to bedlam will surely be paved.

In terms of being healthy, of feeling energized, of feeling ready for obstacles,, and to face life with a level headed mind the upkeep of the mind and body holds the greatest import. The vegetables, fruits, balanced meals, non-sodas are much healthier options than the typical fast food that college students flock to,  and I know first hand that what I am saying is a difficult thing to put into practice.

Sometimes, at 3:00 AM, a cheeseburger, or some greasy tacos, or a breakfast burrito just sounds like an absolute necessity, but the will can remain steadfast! I have seen snacking, sodas, excess alcohol, drugs, and fast food deal irreversible damage on college students who showed promising potential. When there is academic material to be appreciated and learned from, or when there is an exam looming that requires heavy preparation, whatever the task may be, it is always disadvantageous to perform those tasks while not at one’s full capacity in both mind and body.

I understand the desire to live out the college life depicted across pop-culture. However, the University and the system of higher education exists first and foremost to satiate the desire to learn. To progress the intellectual and deliberative processes of the human mind, and propel an individual, who has sought such training, positively forward in their life. The Bedlam that I once knew came upon me quickly and without remorse, because I turned a blind eye to this understanding and allowed my momentary happiness to overshadow my long-term life goals. I write, now removed from my Bedlam of Sophomore year of college, with greatest hope that these words can better prepare new college entries to pave a path away from Bedlam and toward jubilant amelioration.

James Rodriguez is a recent college graduate from New York University, who, after experiencing a diverse range of trials and tribulations in undergrad, is seeking to share his lessons learned with those who can capitalize on them today. Originally from San Antonio, Texas, he found living in New York City drastically different from what he was accustomed to. From this time of transformation, readjustment and reevaluation James now seeks to utilize the lessons and understandings that he gained to better the experiences of those who face similar experiences. The Diary of a College Student: Adjusting to Life Off-Stage and into the Lecture Hall

In having been an actor for over 10 years of my life the adjustment that I experienced in not pursuing acting further in college was interesting, to say the least. Before that, life had been a world of opportunity in the sense that anywhere could have been a stage upon which to demonstrate my craft, my commitment, my skill, etc..

Upon arriving in New York City as a freshman college student, I found myself searching for something new around which to center my life. Something that could fill the void I felt inside me. I wanted to substitute something for the hours of intense training, detail-oriented rehearsals, and a creativity that was conditioned to image the sufferings and joys of human existence. I was in the process of reimagining my life, adjusting to my new life off-stage, in lecture halls, and among unfamiliar peers; in the manner that I would live, the activities that I would pursue daily, the motivation that I felt that pushed me toward always becoming better than what I was the day before, etc.. I believe that this time, a time of life re-imagined, can relate to, and is shared by, those who experience a dramatic shift in their day-to-day routines, their sense of limitation, and their sense of liberty when choosing what to prioritize in life.

This especially applies to college students, namely Freshmen, who recently removed themselves from a familiar environment full of routine and safety. In attending an out-of-town, an out-of-state, or international university, students are faced with the difficult task of taking what they knew as life and drastically reimaging it to suit their needs in their new localities. The difficulties arises from temptation. Temptation that is reinforced by the general newfound liberty of independent living. Spiderman taught me at a young age that “with great power comes great responsibility,” and it is a fact of human existence that ameliorating one’s liberty of choice, freedom of expression, and right to self-determination is directly relatable to one’s sense power.

So in here lies the subject of responsibility. What this essay aims to make palpable is the difficulty that exists in maintaining one’s sense of responsibility and pragmatism during this time of life re-imagined. Before, we discussed the opportunities college students have in trying to find the best student deals, spark new relationships, curate better hygiene, etc. when in an unfamiliar place, such as attending a new school. However, it is this greater realization of the individual’s power of choice that is the true subject of this discourse. I don’t want to sound cliché, but for new college students, there is no greater excitement then determining exactly what it is that makes you happy and using those sources of happiness to your advantage.

The overwhelming nature of arriving in a different city, into a situation where there are no longer limits on the things you can try, or finding where those things will begin generally brings anxiety with it. It is good to feel that anxiety, because it means that you value what your life is and your happiness in living it. If I could go back and tell myself a tidbit of advice freshman year, I would tell him this: there is no greater opportunity missed than living a life that prioritizes your health, your happiness, and your ability to make patient deliberated decisions. That may seem like an Olympian sized feat, but it begins with the littlest of things. For example, when one prioritizes their health and ability to focus and deliberate, than drinking the night before a test perhaps wouldn’t even enter one’s mind as a viable option.

It may seem a little extreme. However, when I was adjusting to my life off-stage there were many decisions that I see now as being nothing but a hindrance on my overall goal of being happy. I was more concerned with my momentary happiness and less concerned with prioritizing my long term goals.  It is easy to try and find the most exciting thing to do as a young new college freshman or sophomore, but it is all too easy to get caught up in the overwhelming liberty that comes with newfound independence. Always prioritize the life you want to be living and don’t simply live in the moment, and I promise that your life re-imagined will be a rewarding one to live.

What cooking is for me, and what it can be for you too

As you have probably understood so far, I value my relationship with food more than the next person, but what I value even more is the time I spend preparing my food. While living at home I was lucky enough, in many ways, to have food ready for me waiting on the table as I got back from school. Though at the time it was the best way I could have imagined things, I had no idea how passionate I would become about preparing my own food daily.

It’s common to see cooking as a chore, and in many ways, it can be. I’m sure that after a day of very hard work when one gets home in time for dinner, the last thing one wants to do is actually have to spend a significant amount of time cooking. However, in my everyday life, I’ve found that instead of dreading the times of day when I have to cook, I actually look forward to them. Not only am I happy during the process of cooking but I’m also proud of what I’ve ended up creating. For me, cooking has become, an escape, a time to relax, and a way to feel a small sense of accomplishment throughout the day. You could even say that it has become a small way for me to meditate…

 

I definitely benefit from my small cooking ritual, and I think if you follow the following steps you might too:

 

  • The Environment

 

First things first, the most important factor is always the environment. Obviously, if we all had amazing, huge, well-lit, chef-worthy kitchens, we would probably all enjoy cooking more. Nonetheless, there are a few things you can do to make your dorm’s or small student apartment’s kitchen more enjoyable. For starters, lighting is key, so if you can, invest in making your kitchen well lit. Next, I’d suggest getting a few good basic appliances, pots and pans to make your cooking struggles easier. Lastly, the miscellaneous but -oh so- important things will make a world of difference: some plants (extra points if they are basil, coriander or mint), some cute kitchen towels as well as oven mitts, and some fun fridge magnets or maybe some pictures on the wall. After you’ve set up your kitchen, it is your job to keep it that way, by cleaning and making it an environment you want to stay in.

  • Your Ingredients

 

Secondly, as any good chef will tell you: good ingredients make the best dishes. I’d suggest finding a store you like, getting familiar with it, and making it a habit of going to shop there for your groceries. In time, shopping for groceries will stop being a hassle and will instead become a peaceful time, in a known environment, without all the frustration it can sometimes have. Furthermore, ensuring you have high quality ingredients every time will show in your final product, which will, in the long term, benefit you greatly, both in your health and wellbeing. One of my favorite places to shop at is Lifesum Market, on 6th avenue and 8th street. I love it, as it is close to campus and my apartment, but most importantly because it carries only organic produce and packaged items. Another crucial factor which makes Lifesum one of my favorite stores is the discount I get from the Campus Clipper.

  • Your Motivation

 

Another key factor in improving your relationship with your kitchen is having real reasons why you want to do so. That is, you have to get educated and understand the benefits of cooking your own food. By knowing what goes inside your food you are in charge of your health and thus in charge of one, if not, the biggest parts of your life. Furthermore, in the long term, by incorporating meal prepping and some money saving hacks, you’ll see how cooking can be very cost effective, helping you adhere to your student budget. Or, if you’re like me, you’ll even find a peaceful escape in cooking, which helps you reboot during the day. Whatever the reason, finding your motivation is key in succeeding.

 

  • The Inspiration

 

After you’ve managed all three previous steps, it is time to get inspired. This means that it’s time to find what exactly you want to make and what gets you most excited to create in your own safe space, in your own way. Finding inspiration is key, as it will take cooking from being a chore to becoming a fun way to pass the time, to be creative and to feel a sense of accomplishment. My grandfather used to say that anyone who likes to eat will eventually know how to cook. So, find what you like to eat and make it for yourself. I suggest getting a few cookbooks that look appealing to you, but have recipes anyone can execute. Or, if you like, you could spend hours, as I do, on websites, blogs and YouTube looking at all the wonderful things people manage to made with just a handful of ingredients. The only thing I am certain of, is that somewhere out there, there is something that you’d love to make again, or make your way, so find it and get cooking.

  • Relaxation

 

Above all, as always, what is more important is that you stay relaxed. If you actually get into cooking and find some enjoyment in it, don’t worry if all you have time to make that day is a grilled cheese sandwich. Any type of food is fuel, but the best fuel is the food you make yourself. Don’t be too hard on yourself when you don’t make something great or if it’s the 10th time you’ve made spaghetti and you still make them mushy. Try to appreciate the fact that you’re trying to do something that is good for you. Every moment that you spend in your kitchen, trying to make something healthy for your body is a moment that you spend showing love for yourself and your body.

My Vegetarian Story

Coming to university brings about changes in one’s character as well as in one’s way of thinking. For many, it is the first time we are living by ourselves, the first time we are in charge of every aspect of our everyday lives: from doing homework, to what we eat, to choosing to go to class, to deciding whether we brush our teeth. It is stressful to suddenly make this transition, but in my experience, it has made me all the more conscious of myself as a person, my needs and my desires. People tend to focus on different things, depending on who they are. When I came to university, I found that my focus was my relationship to food.

I had always enjoyed eating well. “Well” as in healthy and delicious, as my mother had taken up the task of teaching me about the effects of food on my health from a young age. Nonetheless, coming to university was the first time I became truly conscious of what I was putting into my body. I had always known that eating a salad was better than eating a cake, and I was aware of the benefits of each vegetable and food group, but the idea that what I was putting into my body impacted my being in such a strong way hadn’t settled in too much. You could say I was superficially aware of the importance of a good diet.

This all changed when I arrived in New York City and was forced to make all the choices myself. Perhaps this development sprung from having to cope with leaving my mother’s kitchen, where everything was cooked with the freshest Greek ingredients in a healthy way. To go from that to my school’s dining hall, whose salad bar was tasteless and whose prepared dishes all usually contained meat and ten times the amount of oil and/or butter necessary was a rude awakening.

I realized that since I was now in charge of myself, I soon had to be more conscious of what was in my disposition. Upon having this epiphany, I started watching documentaries and reading books on health. Soon enough, I realized that for who I am as a person, being healthy and aware of my nutrition meant giving up meat and a lot of dairy. I became convinced that a whole food, plant-based diet was the best thing I could do for myself. And surely enough, all the benefits people from the vegan community boast about became relevant for me too.

Most of the documentaries and books I read were targeted at people trying to make the switch to a vegan diet. Though I am not fully vegan, I am fully vegetarian and eat vegan about 70% of the time. I found that what resonated with me was not simply the health benefits of a whole foods diet, rather, the compassion the community argued for when it comes to animals. Adopting a whole food, plant-based diet was not only crucial for my health, as I felt my energy levels rise, my skin clear up, my hair get stronger and my mood improve, but it was also crucial for my sense of wellbeing and self-esteem.

After being exposed to the atrocity of what is the meat and dairy industry, I felt a lot of guilt when I engaged in activities which contributed to these disastrous causes. That’s when I realized that what I put into my body was not only important for my body’s health in regards to protein, carbohydrates, healthy fats, nutrients and minerals but also to my mind for the person I wanted to be. So, I made the choice to try to do my part for our planet and the animals and try to do the least “bad” I could. For me, it meant giving up meat completely and minimizing my dairy intake to only a few times per week (usually weekends).

I struggled with the idea that I wasn’t doing the most good I could. I told myself that my ultimate goal was to be completely vegan and in that way, be “perfect”. However, I soon realized that these thoughts were holding me back, as I was not seeing that what I was doing was already a positive change. What I realized was that there was no one way to eat and that actually, what was needed were people who were aware and determined to make the right choices most of the time. My lifestyle and diet were my way of reacting to the information I was given. Chances are, you will have a different experience, and it will not be better or worse than someone else’s, as long as you remember to show compassion and strive to be aware of your body to make the right choices, whichever they may be.

How to Eat Well and Plan Meals on a Budget

When it comes to NYC living, one of the trickiest things for many students to figure out is food. If you’re not on a meal plan, it can be challenging to feed yourself without eating out all the time and bleeding your wallet dry. It’s also hard to make consistently healthy choices about food when you’re surrounded by convenient temptations. My first year at NYU, I fluctuated between forgetting to eat for 19 hours while buried in books, and stuffing my face with junk food. Now, in my senior year, I still have friends who make pasta every night because it’s easy and affordable. Pasta is delicious. I could easily eat my weight in farfelle or linguine, especially slathered in pesto, and the way to my heart is By CHLOE’s mac and cheese. But pasta is also not a balanced meal for every night, and there are a million affordable eats you can make to supplement your college-student-pasta-diet. Here are some of the quick and dirty tips I’ve learned for eating healthy and affordably as a student in New York:

Prep Your Meals

Planning for the week ahead is the single best thing you can do to manage what goes into your body and prevent over-spending. Pick a day for meal prep; I like to do this on Saturday so I can spend all of Sunday focusing on assignments. Decide what you’re going to make for that week, or at least the next few days, and then: 1. pre-chop all veggies and proteins 2. cook a whole lot of food and store it in the fridge. I usually make a huge batch of salad for the week and store it in plastic produce bags. I also chop vegetables and tofu (and in the past, chicken) in advance for things to make later in the week like stir-fry, which is super easy and healthy. Then, when it’s midweek and you’re exhausted, all you have to do is transfer from tupperware to pan and have a hot meal in moments. And if you make a big batch, which I recommend, you’ll have leftovers to microwave. Future you will thank you.

Trader Joe’s is Your Friend

No place in this city seems to have it all, but Trader Joe’s does have some of the best prices compared to other grocery stores. I’m a big fan of their trail mixes, name brand Greek yogurt, and New Mexico Piñon coffee. For leafy greens and other veggies, Whole Foods tends to have better quality produce. As for fruit, don’t be afraid to stop at one of the street vendor carts! They’re well-priced, and usually very good quality. I’ll often grab a banana for about 60 cents on my way to class in the morning, and one of the best peaches I ever had came from a sidewalk fruit vendor.

Affordable Proteins

Meat is usually the most expensive part of a meal. A 2014 article from http://health.usnews.com/ states that in 2014 pork averaged $3.90 per pound, while ground beef averaged $3.27 and choice steak cost about $6.86 per pound. Boneless chicken breasts were an average of $3.27 per pound nationwide. Meanwhile tofu averaged $2 to $2.50 per pound, and beans are even cheaper. Bean salads and tofu have become staples of my diet, and recently I’ve been learning how to cook tempeh. Experiment with tofu marinades, and try some of these recipes!

Frozen Foods

Speaking of frozen fruit, if you have the joy that is freezer space, use the heck out of it! Frozen veggies are often cheaper than fresh produce. I love adding green beans, carrots, corn, and peas into brown rice or quinoa to squeeze a few more vegetables into a meal, and Trader Joe’s frozen succotash is a great mix in. For breakfast, try frozen waffles (toasted) with peanut butter, a drizzle of honey or maple syrup, and a sprinkle of sesame seeds on top. TJ’s also has some lifesaver frozen meals if you need something instant during finals. Stock up on Amy’s Chili for microwavable salvation. You won’t even notice it’s vegan.

Snack Packs

If, like me, you need something to much on while studying, try plain unbuttered popcorn or carrots and hummus. For when you’re on the move, keep snacks on hand to avoid binging or spending when hunger strikes. Fill sandwich bags with almonds and apricots or popcorn sprinkled with curry powder.
